Blissful Baked Beans

I love gourmet baked beans but find it a little unsettling to pay $6.99/lb for them at the market. Instead, I've come up with a foolproof recipe that uses a few cans of baked beans as the base and with a few additions, you have a big pot of fabulous beans ready for a backyard BBQ!

Here's what you'll need: 2 - 3 large cans of baked beans, brown sugar, BBQ sauce, dried mustard, Worcestershire sauce, couple splashes of Bourbon, liquid smoke, 1 large onion and bacon. Don't sweat it if you don't have all the ingredients. Add as many as you have (this isn't an exact science).


Start by carmelizing a large onion. (see other post on how to do this) Carmelizing onions takes awhile so prepare the other ingredients while the onions are cooking.

In a large pot, add the baked beans, a few tbspns of brown sugar, a few splashes of BBQ sauce, a tspn of ground mustard, a couple splashes of Worcestershire sauce, a few splashes of bourbon, a small splash of liquid smoke and a few pieces of cooked bacon (crumbled). When the onions are done, add them to the pot and simmer on low for 30 - 45 mins watching the pot to ensure the beans don't boil.

Serve immediately or keep in the fridge for a late-night snack or side dish for a summer night on the deck.
